This year we're going to a Wassail in Herefordshire, arranged by the dark and mysterious Blackthorn Border Morris, and I'm getting in the mood. Wassailing is traditionally a Twelfth Night celebration and like Christmas, its roots are pagan. We'll be wassailing in Dragon Orchard, and like our ancestors before us, singing to the fruit trees to banish bad spirits and (hopefully) making the tree spirits happy so that the harvest is bountiful. Covid means we probably won't be drinking from a communal wassail bowl, but we'll definitely be partaking in an individual drink or three!⁠

Mulled spiced cider is one of my favourite winter drinks, so I've put together the recipe I use. WAES HAEL!
